To try to make life easier, I try to think ahead by freezing stuff I’ll need later. I peel carrots before they go bad and cut the tops and bottoms off. I clean celery and cut it up in half. I dice up onions. Then I put everything in small sandwich bags and then all of the sandwich bags into a freezer bag. Then I freeze it all. It makes life much easier later.
So tonight… I took out my frozen veggies and 3 chicken breasts. Threw it all into a large pan with water and cooked my chicken. When it was done, I shredded the chicken. I mixed together Cream of Chicken soup, sour cream and little shredded cheese. Then I mixed in the chicken. I greased a baking dish then layered it with fajita size shells. Sprinkled a little cheddar cheese on top of that. Layered the chicken mixture, more shells, cheese, etc until all the mixture was used and finished with shells and lots of shredded cheese.
And here it is….
Layers of yummy gooey cheesy goodness. Now it is cooling. I’ll refrigerate it for dinner tomorrow night.
I also like to use Paula Deen’s House Seasoning in the chicken broth water. YUMMY! It is so easy to make. I mix it up and store it for all kinds of uses.
