Best Breakfast Casserole EVER! December 15, 2011


This recipe was shared with my about 5 years ago by the President and Vice-President of the PTA at my boys school.  It is absolutely the best breakfast casserole I have ever made or eaten.  I would like to share it with all of you as we approach Christmas.  It is a great Christmas morning breakfast.

Ingredients:

2 pounds sausage (your favorite kind)

1 8-0z package of cream cheese

2 packages of crescent roll dough

Steps:

  1. Brown and crumble sausage
  2. Drain Sausage
  3. Put sausage back in the pan and melt cream cheese into it.
  4. Stir thoroughly so that the cream cheese is melted into all of the sausage
  5. Layer 1 package of crescent roll dough on the bottom of a greased casserole dish.
  6. Pour sausage mixture over dough.
  7. Layer second package on top of sausage mixture to cover the sausage.
  8. Bake at 375 until dough is cooked and browned.
  9. Serve!

I have used this for class parties, family events, work breakfast, funeral dish, and the list goes on.

 

The wild things love this casserole.  We have even made it for supper before!  I hope your family enjoys it as much as my family has!

 

Great Idea for Easy School Night Dinner September 9, 2011

After soccer practice and Tae Kwon Do…yes all back to back on Wednesday, I had to come up with a quick dinner.  Ta Da!

These are Peanut Butter Apple Crescents with extra apple slices.  It’s a must try for all moms…whose kids don’t have a nut allergy.

The recipe called for apricot jam, but I didn’t have any so I used what I had.

I used 1 package of Pillsbury crescent rolls, peanut butter and grape jelly, and apples.  Unroll the dough, divide into the triangles, spread with pb and j, place a couple apple slices on top, then roll up into the crescent.  Bake at the temp on the package until golden brown.  Serve with a few extra chilled apples and milk.

YUM.  I heard lots of mom this is delicious.  Easy, yummy and doesn’t take any time to make.

Holiday weekends = Food September 5, 2011

This weekend I promised myself I would make breakfast for my family.  I try to cook breakfast when I can.  But time doesn’t always allow.  Between 7 am Tae Kwon Do practices and 10 am soccer games, Noon swim team practices and 2 pm birthday parties, my weekends don’t allow for a lot of fun time in the kitchen.

Sunday and Monday JT woke me up nice and early.  I guess he knew that would give mom time in the kitchen before the rest of the house woke up.  Well, he was right.

This was a lazy weekend.  Sunday I made biscuit waffles…

So Easy!

This is such an easy recipe. Use a pop open can of biscuits (with 10 biscuits). Heat your waffle maker. Put 4 biscuits on the griddle (one on each corner). Close and cook 1-2 minutes. Then serve with peanut butter or maple syrup.

This morning, I decided to go with the make from scratch recipe for Jumbo Blueberry Streusel Muffins.

I found this recipe in a Southern Living Cookbook. It was delicious. THe kids loved them. It makes 6 jumbo muffins or 12 regular sized muffins. The ingredients were items you already have in the house, flour, sugar, cinnamon, lemon, blueberries, veggie oil, salt, baking powder, butter. It was really easy to make and the muffins were done in 20 minutes.

What a great weekend of yummy breakfast!
